Darby Norris Distillery

Jeff and Philip, two friends with a common passion for liqueur, had a dream of starting their very own gin distillery. With the vacation to Scotland further strengthening their dream, they decided to finally build that dream from the ground up. By 2015, they had steeled themselves and started their venture at last.

Jeff went on a trip to the road of the Whiskey trail to learn more about the art and craft of distilling quality gin. Phillip managed the home front, organizing and setting up the distillery with friends and family.
By 2017, their passion and hard work paid off. With Tinkerbell, their first ever copper still, they opened their distillery. Only 10 months after their manufacturing license, they released Valley Gin, their first gin. It only took a year for their new product to win a gold medal at the Sydney Gin Palooza, to their pleasant surprise.

In 2019, their Navy Strength Gin and won a Bronze at the Tasting Australia Spirits awards. Their hobby has become a truly passionate business for them, and they would be happy to share their excitement (and gin) with you all.
