Established in 2015, Animus Distillery produces small batches of artisan gin using high-grade Australian grain spirit. They use a custom carbon filter system to produce a 100 percent pure base. The botanicals they use are also grown on their property in Kyneton, Central Victoria to ensure that each bottle gets the freshest flavours.

Each batch is made with care as the distillers balance out every element, from the alcohol content to the botanical flavours, to produce high-quality products. The labour intensive process and limited batches are certainly worth it.

Animus Distillery currently has five gins: Macedon Dry Gin (citrusy with notes of myrtle and mountain pepper berry), Ambrosian Gin (bold East Asian flavours with turmeric and ginger), Arboretum Gin (a spicy and herbaceous blend), Davidsonia Gin (fruity with an Australian sour plum base), and Barrel Aged Gin (citrus and juniper base aged in a French oak barrel for over a year).

If you want to try cocktails using their artisan gins, you can visit the Cocktail Lounge & Bar. Here, you can find craft gin and tonics topped with fresh ingredients and garnishes. You are also welcomed to experiment and create your own cocktail to utilize the liquor’s wide flavour range.
