Laceys Hill Distilling Co has been making rounds from the latest 2020 San Francisco World Spirits Competition for their small-batch hand-craft flagship gin. Unlike other distilleries that sources ingredients from New South Wales or South Australia, John Bradbury started distilling harvested lemon myrtles from their 40-acre property since 2018.

Laceys Hill Distilling now boasts three gin distilleries where they proved to be innately artisan, hand-crafted, and with ingredients locally sourced.

An example is their Moreton Sunrise Botanical which proudly infuses a touch of Moreton Bay’s rose petals and fig berries in their bottles. This craft becomes even more unique when you add the butterfly pea’s flower as a tonic. The magic starts when the colour blue transforms into pink.

The micro-distillery may have no plans of mass-producing, as of the moment, because they want to keep their hands on their distilling process and have control of the spirits they create.

However, you can always have a taste of their locally produced gins as you take your week off on Moreton Bay.

Try their recently awarded Lemon Myrtle Dry Gin with olive brine and a drop of classic vermouth and serve it with ice. You only need a slice or two of lemon or lime for a glass Moreton Sunrise and you’re all set to take a trip to memory lane while you enjoy the smell and scenery over Laceys Creek.
