Sullivans Cove Distillery

Handcrafted Tasmanian Gin

First established in 1994, Sullivans Cove Distillery is the second oldest distillery in Tasmania. When it reopened its doors in Cambridge in 2007, it gained acclaim across the globe for handcrafting spirits using the purest Tasmanian water.

Each gin batch is distilled from single malt Tasmanian barley in a copper still, which the owners named Myrtle. Some batches of gin are aged in barrels for up to 18 months.

Sullivans Cove Distillery has an award-winning gin called Hobart No. 4. It’s made with four native botanicals (Tasmanian pepperberry, lemon myrtle, wattleseed, and anise myrtle) to add a spiced taste to the malt flavour.

There’s also a Barrel Aged variant, which is aged in a 300-litre French oak cask to give it a creamy gin texture. There are also notes of sweet lemon curd and a warm spiced flavour.

Sullivans Cove Distillery is open for bottle sales daily. If you’re looking to learn about how each batch is made, you can book a Distillery Tour and Tasting.

The in-depth tour will guide you through Sullivans Cove’s distillation facilities, how they produce their artisan spirits, and a look at their oak barrel collection. End the day with a glass of Hobart No. 4 gin.
